This red wine was made in the same way as Mancius from typical local varieties (Ciliegiolo, Sangiovese Grosso and Merlot).

The 2022 vintage produced a distinctive wine with greater strength and structure than Mancius, to differentiate from Mancius, we have named the 2022 vintage Minerva after the Roman Goddess of wisdom and combat.

Many of the vines from which it is made, located at an altitude of about 340 meters, are about 80 years old and have an annual production of less than 40 quintals per hectare. The wine, in order to preserve its fruitiness, does not undergo maturation in wood.

Vinification

Entirely hand-picked grapes, fermentation with skins for 8 days then 8 months in steel tanks followed by at least 3 months in bottles. Unfiltered.

Tasting Notes

Bright ruby red wine, the nose shows ample aromas of cherry, currants, blackberry and spicy notes; in the mouth it is aromatic, fresh, ample, with soft and enveloping tannins. The aftertaste is long and pleasantly fruity. A stronger and more structured version of Mancius.

Food Pairing

Extremely versatile wine, it is recommended in combination with appetizers of cold cuts such as hams and salami and fresh cheeses, first courses, white meats and lamb.

Our Olive Oil

Our olive groves flourish in clay-marl soils where over 500 trees belonging to nineteen native varieties have been carefully tended, many for generations.

We specialise in the prized Moraiolo variety, an ancient Umbrian cultivar that produces extraordinarily rich oils high in antioxidants, alongside the rare San Felice monovarietal oil known for its elegant almond and white flower notes.

Each harvest is done entirely by hand, and every drop of oil from our DOP-certified trees reflects both the exceptional terroir and our commitment to preserving these ancient varieties.
