Merula
Smooth, fruity and full-bodied
Wine produced with ancient local clones of Merlot. The harvest is by hand and the fermentation takes place after a few days of carbonic maceration. The mainly clayey-marl soils are located on the hills of Collemancio di Cannara (PG), at an altitude of 320 metres.
In order to enhance the rich fruitiness, the wine is not matured in wood and ages only in steel and subsequent refinement of 6 months in the bottle.

Vinification
Entirely hand-picked grapes, fermentation with skins for 7 days then 12 months in steel tanks followed by 3-6 months in bottles. Unfiltered.
Tasting Notes
Ruby red colour, intense aromas of cherry, raspberry and blueberry, accompanied by spicy smoky notes and wild rose. The taste is soft, seductive, rich in aromas of wild berries, with good acidity and sapidity; the tannins are velvety and leave the mouth pleasantly dry. The aftertaste is persistent, elegant and of a certain complexity.
Food Pairing
It is recommended to pair it with appetizers of cold cuts (ham and salami) and medium-aged cheeses, red pasta, risottos, braised and roasted meats.

Our olive groves flourish in clay-marl soils where over 500 trees belonging to nineteen native varieties have been carefully tended, many for generations.
We specialise in the prized Moraiolo variety, an ancient Umbrian cultivar that produces extraordinarily rich oils high in antioxidants, alongside the rare San Felice monovarietal oil known for its elegant almond and white flower notes.
Each harvest is done entirely by hand, and every drop of oil from our DOP-certified trees reflects both the exceptional terroir and our commitment to preserving these ancient varieties.
