A wine produced with traditional Umbrian grapes, such as Ciliegiolo, Sangiovese Grosso, Merlot and Sagrantino.

After 2 months of drying on the frames, a sweet and tannic nectar is obtained, which gives life to a harmonious wine with the aromas of red fruits such as morello cherry, currant, and blackberry.

Vinification

Hand picked grapes are dried on frames for 2-3 months. Fermentation is in vats with skin contact for 15 days. The wine spends about 8 months in steel vats, and a further 3 months in bottles.

Tasting Notes

Intense red wine, the nose has the characteristic scent of dried grapes, with warm hints of cherry, currant and blackberry; in the mouth it is aromatic and ample, with tannins and acidity perfectly balanced by the residual sugars. The aftertaste is persistent, with rich nuances of red fruits.

Food Pairing

Extraordinary in accompanying aged cheeses, dry pastries, panettone, Easter cake, ice cream, and nougat. It is remarkable in combination with traditional Umbrian desserts, such as the Spoleto cake, the brustengolo from Perugia, the medieval ciaramicola, the torcolo of San Costanzo. Perfect with any type of chocolate.

Join us at our cantina to taste wines and olive oil that carry the story of this land, paired with local foods. Our guided tastings are unhurried and intimate, giving you time to savour what we make in the place where it was grown, with nothing to distract from the flavours.

Tastings are currently only available in English while we improve our Italian language skills.

Our Olive Oil

Our olive groves flourish in clay-marl soils where over 500 trees belonging to nineteen native varieties have been carefully tended, many for generations.

We specialise in the prized Moraiolo variety, an ancient Umbrian cultivar that produces extraordinarily rich oils high in antioxidants, alongside the rare San Felice monovarietal oil known for its elegant almond and white flower notes.

Each harvest is done entirely by hand, and every drop of oil from our DOP-certified trees reflects both the exceptional terroir and our commitment to preserving these ancient varieties.
