A highly sought after and precious white passito made from our ancient white vines, such as Trebbiano, Malvasia from Lazio and Tuscany, and Grechetto.

The wine is made in a careful way in order to preserve the fruity aroma and delicious flavors, it is extremely rich in aromas and flavours of fruit, from peach in syrup to candied apricot and dry figs, with subtle notes of acacia honey.

Vinification

Harvested by hand, after 3 months of drying on frames, the grapes are pressed and the must left to ferment for 15 days at a constant temperature (15°), refinement is carried out for 12 months in steel barrels. The wine will continue to mature in the bottle developing a richer dark colour .

Tasting Notes

Amber-coloured wine, with golden reflections that tend to copper over the years; warm and enveloping, fruity, on the palate it is sweet but not cloying, well balanced acidity, with a taste of dried and candied fruit. The aftertaste is powerful and persistent.

Aged cheeses, liver pate, roasted lamb and spiced white meats, pastries nuts, spoon desserts, ice cream, nougat, pandoro, dried fruit, Easter cake, cookies with almonds.

Join us at our cantina to taste wines and olive oil that carry the story of this land, paired with local foods. Our guided tastings are unhurried and intimate, giving you time to savour what we make in the place where it was grown, with nothing to distract from the flavours.

Tastings are currently only available in English while we improve our Italian language skills.

Our Olive Oil

Our olive groves flourish in clay-marl soils where over 500 trees belonging to nineteen native varieties have been carefully tended, many for generations.

We specialise in the prized Moraiolo variety, an ancient Umbrian cultivar that produces extraordinarily rich oils high in antioxidants, alongside the rare San Felice monovarietal oil known for its elegant almond and white flower notes.

Each harvest is done entirely by hand, and every drop of oil from our DOP-certified trees reflects both the exceptional terroir and our commitment to preserving these ancient varieties.
